Porcupine Meatballs


1 1/2 lbs ground beef

2 boxes Beef Rice a Roni

2 eggs


In large bowl mix together ground beef, Rice a Roni (NOT the seasoning packet, just the rice) and the eggs. It mixes better when you use your hands. Make meatballs and brown them in about 4 tbsp oil....just until browned. Put meatballs in crockpot.


Heat 5 cups water almost to a boil and mix in the two seasoning packets. Pour over the meatballs.


Cook on high for 1/2 an hour and then on low for 2-3 hours. We serve them over mashed potatoes.
