
8 oz. (3 cups) rotini pasta, uncooked
1/4 cup Sun-dried tomatoes in oil, drained, oil reserved
1 bag (10 oz.) fresh spinach, torn (I only used a little bit less than 1/2 the bag)
1 cup Shredded Asiago Cheese (Couldn't find this, so I used the 3 Cheese Italian blend)
1/2 cup KRAFT Sun-Dried Tomato Dressing
2 cloves Garlic, minced (Didn't add the garlic...actually I forgot)
1-2 chicken breasts, cooked and shredded (optional)
COOK pasta as directed on package, adding tomatoes and spinach for the last min. of the pasta cooking time; drain.
PLACE pasta in large bowl. Add reserved oil and remaining ingredients; toss to coat.
{The chicken isn't part of the original recipe. I added that since I had chicken I needed to use. We had just this and garlic bread for dinner and it is sooo good! One of our new favorites! You can leave the chicken out for a side dish, or add it....doesn't matter!}
